Very fun. Its strength, however, is in the co-op multiplayer.

This is a great kart racing game for certain.
Does it live up to the N64 predecessor though? Certainly not.
The ways in which they innovated with Double Dash do add some nice gameplay elements, but if you don't want to play in co-op, the experience just isn't as strong as the single-player experience offered in the N64 version.
This, ultimately, is why I can't score the game higher. I like to sit with 2 or 3 friends and all compete together.... But in Double Dash, you just feel like you're not really "doing it right" unless you've got two live humans per kart.
Whether it's just a psychological thing or not, I can't say, but I will tell you, it kind of doesn't matter. It's something that detracts from the game.
I never really liked the battle mode in the N64 version, so the fact that it's not as good in DD doesn't really bother me much. If you're like Cannon Fodder though, you're going to be bummed for sure.
In the end, this is a kinder, gentler Mario Kart game that you can play with casual or non-gamers and still have some fun. But for those of us who like the hardcore competition, there really will be nothing like Mario Kart 64.
